Griffon and Sphynx

Brevard's newest brewery, in the Lumberyard District — a rebrand of the former UpCountry Brewing led by award-winning brewmaster Wayne Wambles, with a focus on classic styles and lower-ABV pours.

~19 min away

Brevard's newest brewery, tucked into the Lumberyard District at 212 King Street. The space is a rebrand of what used to be UpCountry Brewing, reopened in October 2024 under brewmaster Wayne Wambles — a veteran who built his reputation on IPAs and barrel-aged stouts elsewhere, but is using this taproom to chase his own preferences. Expect classic styles and lower-alcohol pours, a deliberate move away from the IPA-heavy norm in town.

The brewery's name comes from Wambles's own animals — two Brussels Griffons and a Sphynx cat — and yes, the taproom is pet-friendly. Across the street from Underground Salvage Co. on West French Broad, so it's an easy add-on to a Main Street wander, though it sits just outside the downtown social district.

Hours run afternoon-to-evening, with later closes on Friday and Saturday and an earlier 6 PM close on Sunday. Worth checking their Instagram for the current rotation before you go — the lineup turns over often.
